Fishlike Dough

This dish's musky and refreshing texture is the hallmark of fishlike dough. Nearly every household in Northwest China has savored this delicacy, prepared in various ways like dry mixing or frying.

With its rich taste and soft texture, the characteristic fishlike dough becomes an important part of the local-flavor snacks in Dunhuang, Gansu province.

Donkey Meat and Yellow Noodles

Donkey meat yellow noodles are renowned in the national gourmet world and is considered a must-try for tourists visiting Dunhuang.

Yellow noodles are a kind of stretched noodles that taste delicious and have a soft texture. They are generally paired with a topping made from mushroom foam, diced donkey meat and tofu.

Paste Pot

The paste pot starts with a chicken soup base, thickened to perfection with silkworm bean starch, and enriched with shredded chicken, gluten, fried dough twists and vermicelli, all seasoned with a kick of pepper.

The soft gluten, crispy fried dough twists and smooth vermicelli complement the aromatic chicken soup infused with the peppery spice, making it a beloved breakfast option for Jiuquan locals.

Suoyang Oil Cake

Suoyang oil cake is a signature food of the city on Jiuquan, Gansu province, and is meticulously crafted from pure, green ingredients like Suoyang powder and wheat flour. It is known for its coffeelike color, round shape, smooth surface, fresh aroma and tender and sweet taste.

Suoyang, a sand-growing rare plant, holds dual significance as both a delicacy and a precious traditional Chinese medicinal herb. Oil cakes infused with Suoyang are esteemed as a special delicacy served to honored guests, and are greatly loved by tourists.

Chicken Braised Cake

In contrast with other regions, Jiuquan-style chicken braised cake places a greater emphasis on ample chicken and a thinner cake skin.

The cake has a striking golden hue after cooking, and the chicken pieces retain a firm yet tender texture and deliver a fresh and delectable taste.

Crusty Pancake

With a history spanning over a thousand years, Jiuquan's crusty pancake is renowned as a cherished rural delicacy and favored gift for visiting loved ones.

Made with premium ingredients such as sesame oil, fine wheat flour, fresh milk, eggs, and honey, its preparation involves slow cooking over a low flame, ensuring a crispy crust while maintaining a hollow interior.

Bubble Oil Cake

Deep-fried dough cakes have been a tradition in Dunhuang for over 1,200 years. In the 1980s, Dunhuang Hotel introduced an innovative version known as the "bubble oil cake".

During frying, bubbles form on one side of the cake, resulting in a fluffy, translucent appearance reminiscent of catkins. The cake itself is light and airy and has a delightful honeylike sweetness.
