Guokui

Guokui is a popular roasted cake in Jiuquan. The cakes baked in a pot are known as Guokui, while the ones steamed in a steamer are called a zhengbing. The size of Guokui varies based on the pot used, with a thickness ranging from 5 to 10 centimeters. You can find different variations of Guokui, such as zao'er Guokui with red dates, and shazao Guokui with jujubes. Additionally, there are Guokui varieties that incorporate ingredients like turmeric, red yeast rice, or fragrant beans, which are unique aromatic legumes found in Jiuquan.
